CHOCOLATE CHIP COOKIE COBBLER

Chocolate Chip Cookie Cobbler features soft, chewy chocolate chip cookies on top, with a rich, warm fudgy sauce beneath! Top it off with a scoop of ice cream for the perfect indulgence!

INGREDIENTS

For the Cookie Dough:

  • 3/4 cup softened butter
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons vanilla
  • 2 eggs
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 3/4 cup chocolate chips
  • 1/3 cup pecans (optional)

For the Sauce:

  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 2 tablespoons cocoa powder
  • 1 1/4 cups boiling water

INSTRUCTIONS

  • Preheat your oven to 350°F.
  • In the bowl of a stand mixer, cream together the butter, sugar, and brown sugar until light and fluffy.
  • Beat in the eggs and vanilla extract.
  • Mix in the flour, baking powder, and salt until just combined.
  • Fold in the chocolate chips and pecans (if using); set the dough aside.
  • In a glass 9×9″ pan, combine the dry ingredients for the sauce.
  • Pour the boiling water over the dry mixture and stir to combine.
  • Evenly distribute the cookie dough over the sauce.
  • Bake for 35-45 minutes, or until the cookie is golden brown on top.
  • Serve warm with a scoop of ice cream.

NOTES

For a quicker option, use one 16.5 oz tube of refrigerated chocolate chip cookie dough. Prepare the sauce as instructed, then cut the dough into 9 slices. Arrange the slices over the sauce and bake for about 30 minutes, or until golden brown.
