CILANTRO LIME RICE

This 5-ingredient recipe for Chipotle’s signature Cilantro Lime Rice is a quick and easy version that comes together in under 30 minutes! INGREDIENTS

  • 1 cup long grain white rice
  • 1 ¾ cups water
  • 2 tablespoons oil, divided
  • 1 teaspoon salt, plus extra to taste
  • 2 tablespoons lime juice (from 1 lime)
  • ½ cup finely chopped cilantro

INSTRUCTIONS

  • Bring water to a boil in a medium pot. Once boiling, add rice, 1 tablespoon of oil, and 1 teaspoon of salt. Bring back to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes or until the rice is tender. Let it sit, uncovered, for 5 minutes.
  • Fluff the rice with a fork, then stir in the remaining tablespoon of oil, lime juice, and chopped cilantro. Set aside until ready to serve.

NOTES

  • Prep-Ahead: This rice tastes best when served immediately, but it can be made 1-2 days ahead. For the best flavor, add cilantro just before serving after reheating.
  • Storage: Store in an airtight container in the refrigerator for up to 3-4 days. You can also freeze it in a freezer-safe container for up to 3-4 months. Be sure to defrost completely before reheating.
  • Reheating: To reheat, warm the rice in a skillet over medium-low heat with a little oil for 4-5 minutes, stirring frequently, until heated through.
