If you love one-pot meals as much as I do, then you need to try this One-Pot Burrito Bowl recipe! It’s a delicious, 30-minute meal made in just one pot—now that’s my kind of cooking!
INGREDIENTS
- 1 tablespoon olive oil
- 1 pound ground turkey or ground beef
- ½ green bell pepper, diced
- ½ sweet onion, diced
- ½ teaspoon minced garlic
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chiles
- 2 cups chicken broth
- 1 cup minute brown rice
- 1½ tablespoons taco seasoning
- ½ teaspoon red pepper flakes
- Salt and pepper, to taste
- 1 cup shredded cheese
Optional toppings: Tortilla chips, salsa, lettuce, sour cream, guacamole, diced tomatoes, green onions, jalapeños

INSTRUCTIONS
- Heat olive oil in a large pan over medium heat. Add diced onions, green bell peppers, and garlic, then sauté for 2–3 minutes until the onions start to brown.
- Add the ground turkey or beef and cook until fully browned. Drain any excess grease.
- Stir in black beans, corn, diced tomatoes with green chiles, rice, taco seasoning, and red pepper flakes.
- Pour in the chicken broth and stir well to combine. Bring to a light boil over medium heat.
- Cover the pan, reduce heat to low, and let simmer for 15–20 minutes, or until the rice is tender. Season with salt and pepper to taste.
- Remove from heat, sprinkle cheese on top, and cover for another 2–3 minutes to allow the cheese to melt.
- Serve over lettuce and add your favorite toppings. Enjoy!
