WHAT IS CHICKEN SPAGHETTI?
Chicken spaghetti is a hearty, comforting baked casserole made with tender shredded chicken, cooked spaghetti, and Rotel tomatoes, all smothered in a creamy, cheesy sauce featuring cream of mushroom soup, cream cheese, Velveeta, and a blend of flavorful spices and seasonings.
INGREDIENTS
- 2 pounds boneless, skinless chicken breasts
- 1 (16-ounce) package spaghetti
- 1 (10-ounce) can Ro*Tel tomatoes
- 2 (10.5-ounce) cans cream of mushroom soup
- 1 (16-ounce) package Velveeta cheese
- 4 ounces cream cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup shredded sharp cheddar cheese
INSTRUCTIONS
- Place the chicken in a large pot and cover with water. Cook over medium-low heat until fully cooked, being careful not to boil the chicken to avoid making it tough. Once cooked, allow the chicken to cool enough to handle, then shred it using two forks.
- Preheat the oven to 350°F and lightly grease a 13×9-inch baking dish with nonstick cooking spray.
- Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
- In a large pot, combine the Ro*Tel tomatoes (with juice), cream of mushroom soup (undiluted), Velveeta cheese, and cream cheese. Heat over low heat, stirring constantly, until the cheeses are melted and the mixture is smooth. Stir in garlic powder and onion powder.
- Add the shredded chicken and cooked spaghetti to the pot, mixing well to combine.
- Pour the mixture into the prepared baking dish and top with shredded cheddar cheese.
- Bake for 20 to 30 minutes, or until the casserole is hot and the cheese is melted.
