ALMOND FLOUR BAGELS

Almond Flour Bagels are a simple and delicious gluten-free option made with just two main ingredients—almond flour and Greek yogurt!

INGREDIENTS

  • 2 to 3 cups super fine almond flour
  • 1 cup nonfat Greek yogurt (Fage brand works best)
  • 1 large egg
  • Everything Bagel Seasoning (or your preferred seasoning)

INSTRUCTIONS

  • Preheat your oven to 375°F and line a baking sheet with parchment paper.
  • In a medium bowl, mix 2 cups of almond flour with the Greek yogurt until well combined. If the dough is too sticky, gradually add more almond flour until it reaches a workable consistency.
  • Divide the dough in half, rolling each portion into a 12-inch log. Cut each log into three equal pieces, then shape each piece into a bagel by forming a round shape.
  • Place the bagels on the prepared baking sheet. Brush with an egg wash and sprinkle your desired seasoning on top.
  • Bake for 20 to 22 minutes, or until the bagels turn golden brown. Make sure they are baked through to avoid a crumbly texture.
  • Allow the bagels to cool before slicing. Toast them for extra crispiness and enjoy with cream cheese or peanut butter.
  • Store in an airtight bag in the refrigerator for a few days. Slice and toast as needed.

NOTES

These bagels won’t have the exact texture of traditional bagels, but they make a great gluten-free alternative. Their flavor will depend on the seasoning you use!

  • 2 cups white whole wheat flour (or a mix of all-purpose and whole wheat flour), plus extra for rolling
  • 4 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1 3/4 cup plain Greek yogurt (no substitutions)
  • 1 cup loosely packed fresh baby spinach
  • 1 tsp honey (optional)
  • 1 egg, whisked for egg wash (omit for egg-free)

  • Preheat Oven: Preheat your oven to 375°F. Line a baking sheet with parchment paper or lightly grease it with oil.
  • Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt.
