QUICK TOMATO CONFIT ON TOASTS WITH KING OSCAR SARDINES

Crispy, sweet, savory, and vibrant—each bite of these Quick Tomato Confit Toasts with King Oscar Sardines is a burst of flavor.

INGREDIENTS

  • ½ small loaf of fresh bread or baguette (ciabatta, focaccia, sourdough, or soda bread work well too)
  • 1 can King Oscar Brisling Sardines with Extra Virgin Olive Oil, White Wine Vinegar, and Capers (substitute with another King Oscar flavor if needed)
  • 1 tablespoon olive oil
  • 1½ cups cherry tomatoes, halved
  • 1 large garlic clove, grated or finely minced (use a microplane for grating)
  • 1 tablespoon drained capers
  • 1 tablespoon chopped fresh thyme
  • Fresh basil, chopped (for garnish)

INSTRUCTIONS

  • Preheat the Oven: Set the oven to 350°F. Arrange the bread slices on a baking sheet and bake for about 10 minutes, flipping halfway through. Toast until slightly golden—avoid over-toasting to keep the texture just right.
  • Prepare the Tomato Confit:
    • Heat olive oil in a small pan over medium heat.
    • Add the grated garlic, capers, and thyme, stirring for about 30 seconds.
    • Toss in the halved cherry tomatoes and season with salt and pepper. Reduce the heat to low and let it simmer for 15 minutes, stirring occasionally, until the tomatoes burst and soften.
  • Assemble the Toasts:
    • Spoon the tomato confit evenly over the toasted bread.
    • Top each toast with sardine fillets and a few capers from the can.
    • Garnish with fresh basil and serve immediately.

Enjoy these flavorful toasts as a snack, appetizer, or light meal!
