SPICY KOREAN GOCHUJANG BEEF NOODLES

These spicy Korean Gochujang noodles are incredibly easy to make, packed with a saucy, spicy, and slightly sweet flavor that’s perfect for a quick 30-minute dinner! Serve with your choice of ground meat—beef, turkey, or chicken—for a simple, protein-packed meal.

INGREDIENTS

  • 1 pound ground beef, turkey, or chicken
  • 12 ounces rice noodles (or noodles of your choice)
  • ¼ cup low-sodium gluten-free soy sauce (tamari)
  • ¼ cup gochujang paste (check ingredients for gluten!)
  • 2 tablespoons coconut cream
  • 2 teaspoons tomato paste
  • 2 tablespoons water
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon fresh grated ginger
  • ½ teaspoon red pepper flakes (adjust to your spice preference)

INSTRUCTIONS

  • Bring a pot of salted water to a boil and cook the noodles according to the package instructions. Drain and rinse, then toss with 2 tablespoons of butter to prevent sticking.
  • While the noodles cook, add the ground meat to a large skillet and sauté until fully cooked.
  • In a bowl, whisk together all sauce ingredients and set aside. Note that some chunks of coconut cream may remain, but they will melt once combined with the noodles.
  • Add about half of the sauce to the cooked noodles and toss to combine.
  • Add the ground meat to the noodles, followed by the remaining sauce. Toss until everything is well-coated, and let the flavors meld together over low heat for a few minutes.
  • Serve with chopped scallions, sesame seeds, cilantro, and/or extra red pepper flakes for garnish. Enjoy!
