Tomato Basil Pasta Salad is a refreshing and easy-to-make dish featuring penne pasta, juicy tomatoes, fresh basil, and creamy mozzarella, all tossed in a flavorful balsamic vinaigrette. Perfect for a light dinner or as a tasty summer side at potlucks and gatherings!
INGREDIENTS
- 16 oz penne pasta
- 18 oz grape tomatoes, halved
- 8 oz mozzarella pearls
- 3 tbsp fresh basil, chopped
Balsamic Dressing
- 2/3 cup olive oil
- 1/3 cup balsamic vinegar
- 2 tsp salt
- 1 tsp black pepper
- 3 tsp garlic, minced

INSTRUCTIONS
- Cook the penne pasta according to the package instructions. While it cooks, prepare the tomatoes and basil.
- Drain the pasta and rinse it under cold water to cool. In a large bowl, combine the pasta, tomatoes, basil, and mozzarella.
- To make the balsamic dressing, whisk together all the dressing ingredients in a bowl or shake them in a jar with a lid for 2–3 minutes until well combined and slightly thickened.
- Pour half of the dressing over the pasta salad and toss to coat. Add more dressing as needed until everything is evenly coated.
