TOMATO FENNEL SALAD

INGREDIENTS

  • 2 tablespoons white wine vinegar
  • 1 large garlic clove, grated
  • 2 tablespoons minced fresh dill, plus extra for garnish
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon stone-ground mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper, plus more for garnish
  • 3 large heirloom tomatoes, thinly sliced
  • 1 small fennel bulb, thinly sliced
  • 1/4 cup Castelvetrano olives, pitted and halved
  • Flaky salt for serving

INSTRUCTIONS

  • In a small bowl, whisk together the vinegar, garlic, dill, olive oil, mustard, salt, and pepper until well combined.
  • Arrange the sliced tomatoes and fennel on a large platter, slightly overlapping. Sprinkle with the olives and drizzle with the prepared dressing.
  • Garnish with additional fresh dill and a sprinkle of flaky salt. Serve immediately.
