TOMATO BASIL PASTA SALAD

Tomato Basil Pasta Salad is a refreshing and easy-to-make dish featuring penne pasta, juicy tomatoes, fresh basil, and creamy mozzarella, all tossed in a flavorful balsamic vinaigrette. Perfect for a light dinner or as a tasty summer side at potlucks and gatherings!

INGREDIENTS

  • 16 oz penne pasta
  • 18 oz grape tomatoes, halved
  • 8 oz mozzarella pearls
  • 3 tbsp fresh basil, chopped

Balsamic Dressing

  • 2/3 cup olive oil
  • 1/3 cup balsamic vinegar
  • 2 tsp salt
  • 1 tsp black pepper
  • 3 tsp garlic, minced

INSTRUCTIONS

  • Cook the penne pasta according to the package instructions. While it cooks, prepare the tomatoes and basil.
  • Drain the pasta and rinse it under cold water to cool. In a large bowl, combine the pasta, tomatoes, basil, and mozzarella.
  • To make the balsamic dressing, whisk together all the dressing ingredients in a bowl or shake them in a jar with a lid for 2–3 minutes until well combined and slightly thickened.
  • Pour half of the dressing over the pasta salad and toss to coat. Add more dressing as needed until everything is evenly coated.
