INGREDIENTS
- 4 lbs boneless lamb roast
- 2 tsp salt
- ½ tsp pepper
- 1 tsp oregano
- ½ tsp thyme
- ½ tsp marjoram
- 5 cloves garlic, sliced into slivers

INSTRUCTIONS
- Using a sharp knife, make small cuts all over the lamb roast and insert the garlic slivers.
- Combine the salt, pepper, oregano, thyme, and marjoram, then rub the spice mixture evenly over the lamb.
- Place the lamb in a slow cooker and cook on low for 6-8 hours, until tender.
- Halfway through cooking, remove as much liquid as possible and set it aside. This helps the roast develop a flavorful crust and prevents excess moisture. Use the reserved liquid later to keep the meat juicy or make a gravy.
