LEFTOVER RICE MADE INTO SPANISH RICE

If you have leftover steamed rice from last night’s stir fry, you can easily turn it into Spanish rice. It tastes just as delicious as traditional Spanish rice!

INGREDIENTS

  • 3 cups cooked rice (leftover white or brown)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 onion, diced
  • 4 garlic cloves, minced
  • 1/2 cup tomato sauce (or more, if desired)
  • 1/4 cup water
  • 1/4 teaspoon ground coriander
  • Salt and pepper to taste

DIRECTIONS

  • In a skillet, heat olive oil and butter over medium heat.
  • Add the diced onion and sauté until softened.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the rice and continue to sauté for a couple of minutes.
  • Pour in the tomato sauce, water, and coriander, stirring to combine.
  • Bring the mixture to a simmer, then reduce the heat, cover, and cook for 15-20 minutes, stirring occasionally until the sauce is absorbed and the rice becomes less sticky.
  • Season with salt and pepper to taste, and enjoy!
