CHICKEN FAJITA BURRITO BOWL

This chicken fajita bowl is the ultimate meal prep recipe! Featuring fluffy rice, sautéed chicken, vibrant peppers and onions, all topped off with my homemade chipotle aioli, these bowls are an easy, crowd-pleasing dinner your family will love.

INGREDIENTS

CHICKEN & VEGGIES

  • 1 ½ pounds chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 ¼ teaspoons garlic powder
  • 1 ¼ teaspoons cumin
  • 1 teaspoon brown sugar
  • 1 teaspoon oregano
  • 1 ½ teaspoons chili powder
  • 3 teaspoons paprika
  • 1 tablespoon tapioca starch
  • 3 bell peppers (any color)
  • ½ large red onion

FOR SERVING

  • 2 cups cilantro lime rice
  • 1 can black beans (drained and rinsed)
  • 2 cups chopped lettuce
  • ½ cup pico de gallo
  • ½ cup chipotle aioli (click for recipe)

INSTRUCTIONS

  • Prepare the Chicken: Pound the chicken breasts to about ¼–½ inch thickness. If using large breasts, slice them in half lengthwise to cook as cutlets, or cut into strips before seasoning.
  • Season the Chicken: In a bowl, mix the seasonings (salt, garlic powder, cumin, brown sugar, oregano, chili powder, paprika) with tapioca starch. Coat the chicken evenly in the seasoning blend.
  • Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 4–5 minutes per side, or until fully cooked. Transfer to a plate and slice into strips if not already done.
  • Sauté Veggies: In the same skillet, add the sliced bell peppers and red onion. Sauté for 7–8 minutes until softened and golden brown, adding more oil if needed.
  • Combine Flavors: Return the cooked chicken to the skillet and toss with the veggies for 1–2 minutes to blend the flavors.
  • Assemble Bowls: Layer your bowl with a base of cilantro lime rice or lettuce. Top with the chicken and veggie mixture, black beans, pico de gallo, and a dollop of chipotle aioli.
  • Optional Add-Ons: Customize with fresh guacamole, cilantro, cashew queso, or cilantro lime crema if preferred.
