This has been my go-to healthy banana bread recipe for years, and for good reason! It’s moist, delicious, and packed with warm cinnamon flavor and crunchy walnuts. A sprinkle of raw sugar on top adds just the right amount of sweetness and a delightful crunch. Plus, it’s incredibly easy to make—no stand mixer needed. Just grab one bowl, one pan, and get ready for the wonderful aroma that will fill your kitchen as it bakes. It’s also the perfect way to use up those overripe bananas!
INGREDIENTS
- 3 medium bananas, mashed
- ⅔ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- ¼ cup nonfat plain Greek yogurt
- ¼ cup vegetable or avocado oil
- 1 ¼ cups white whole wheat flour
- 1 tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ½ tsp fine sea salt
- ½ cup coarsely chopped walnuts
- Raw or sparkling sugar, for sprinkling on top (optional)
INSTRUCTIONS
- Preheat your oven to 325°F. Grease a 9 x 5-inch loaf pan or line it with parchment paper.
- In a large bowl, mash the bananas. Whisk in the sugar, eggs, vanilla, yogurt, and oil until smooth and well combined.
- Add the flour, baking soda, cinnamon, nutmeg, and salt to the bowl. Stir gently until just combined, then fold in the walnuts.
- Pour the batter into the prepared pan and sprinkle the top with raw sugar if desired. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
NOTES
- The riper the bananas, the better the flavor! Frozen, thawed bananas also work well and add extra moisture.
- Avoid over-mixing once the dry ingredients are added; stir just until the flour is incorporated.
- A metal loaf pan helps ensure even baking, while ceramic or glass pans may need additional time.
- If you prefer a nut-free loaf, simply omit the walnuts or replace them with chocolate chips for a sweet twist.
