HOMEMADE PANCAKE MIX RECIPE

INGREDIENTS

For the Pancake Mix:

  • 4 ½ cups all-purpose flour
  • Heaping ¼ cup granulated sugar
  • 3 tablespoons + 2 teaspoons baking powder
  • 1 ½ teaspoons fine sea salt

For One Batch of Pancakes (6-8 pancakes):

  • Cooking spray
  • 2 large eggs
  • 1 ¼ cups milk or water
  • ¼ cup unsalted butter (melted and cooled slightly), or canola/vegetable oil
  • 1 ¾ cups pancake mix

INSTRUCTIONS

To Make the Pancake Mix:

  • Combine the flour, sugar, baking powder, and salt in a large, airtight container. Double the recipe if desired for a bigger batch.
  • Whisk thoroughly to ensure the ingredients are evenly distributed. Seal the container and store it in a cool, dry place until ready to use.

To Make the Pancakes:

  • In a mixing bowl, whisk the eggs until frothy. Add the milk and cooled melted butter (or oil) and whisk until combined. Stir in the pancake mix, mixing just until the ingredients are incorporated—do not overmix.
  • Preheat a griddle to 360°F and lightly coat with cooking spray. Alternatively, heat a skillet over medium-high heat and spritz with cooking spray.
  • Scoop about ⅓ cup of pancake batter per pancake onto the griddle or skillet, spacing each one at least 2 inches apart. Cook for 2-3 minutes, until bubbles form across the surface. Flip and cook for another 2 minutes, or until the pancakes are lightly golden.
