BANANA CRUMB MUFFINS (EASY)

INGREDIENTS

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 overripe bananas, mashed
  • ¾ cup white sugar
  • 1 egg, lightly beaten
  • ⅓ cup butter, melted

Optional:

  • 1 teaspoon ground cinnamon (perfect for cinnamon lovers)

Crumb Topping:

  • 2 tablespoons all-purpose flour
  • ⅓ cup packed brown sugar
  • ⅛ teaspoon ground cinnamon
  • 1 tablespoon butter

INSTRUCTIONS

For the Muffin Batter:

  • Preheat your oven to 375°F and line a muffin pan with 10 baking cup liners (or grease the pan).
  • In a large bowl, combine 1 ½ cups of flour, baking soda, baking powder, cinnamon (if using), and salt. Mix well.
  • In a separate medium bowl, mash the bananas. Beat together with white sugar, egg, and melted butter until combined.
  • Add the banana mixture to the dry ingredients and stir until just moistened. Be careful not to overmix.
  • Spoon the batter into each muffin cup, filling about ¾ full.

For the Crumb Topping:

  • In a small bowl, mix together 2 tablespoons of flour, brown sugar, and cinnamon.
  • Cut in 1 tablespoon of butter until the mixture resembles coarse cornmeal.
  • Sprinkle the crumb topping evenly over the muffin batter.
