INGREDIENTS
Pineapple
- 4 slices (½-inch thick) fresh pineapple
Pork
- 3 tablespoons hoisin sauce
- 2 teaspoons grated fresh ginger (peeled)
- 1 medium garlic clove, minced
- 1 teaspoon Dijon mustard
- 1½ pounds pork tenderloin (trimmed)
- Coarse salt and freshly ground black pepper, to taste
Sauce
- 2 tablespoons hoisin sauce
- 2 tablespoons pineapple juice
- 2 teaspoons grated fresh ginger (peeled)
- 1 teaspoon soy sauce
- Salt and freshly ground black pepper, to taste
INSTRUCTIONS
Prepare the Pork and Pineapple:
- Preheat the broiler. Place the pineapple slices on a foil-lined baking sheet.
- In a small bowl, mix the hoisin sauce, ginger, garlic, and mustard. Rub the pork tenderloin with this sauce mixture.
- Broil the pork about 4 inches from the heat, placing the pineapple slices on the rack beneath the pork. Cook the pork until it reaches 145°F on an instant-read thermometer, about 15 to 20 minutes. Once done, remove the pork from the broiler and let it rest for 10 minutes—its internal temperature will rise to 150°F.
- Turn the pineapple slices and continue broiling until browned in spots, about 10 more minutes.
- Slice the pork and halve the pineapple slices. Arrange both on a platter. Drizzle the pork with the pan juices, and season with salt and pepper. Serve with the ginger sauce.
Prepare the Sauce:
- In a small bowl, combine all sauce ingredients. Season with salt and pepper to taste.
Serve:
- Serve the sliced pork tenderloin with the grilled pineapple and drizzle with the sauce.
Notes:
- To peel ginger, freeze it for easier grating. After shaving off the peel, freeze the remaining ginger for future use.
