PORK BANH MI BURGER

Our love for both burgers and banh mi inspired this irresistible fusion: a banh mi burger recipe that brings the best of both worlds together.

INGREDIENTS

Pork Patties

  • 1 pound ground pork
  • ¼ cup fresh basil, finely chopped
  • 4 garlic cloves, minced
  • 3 green onions, finely chopped (white and green parts)
  • 1 tablespoon fish sauce
  • 1–2 teaspoons sriracha (adjust for spice preference)
  • 1 tablespoon sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon kosher salt

Sriracha Mayo

  • ½ cup mayonnaise
  • 2 green onions, finely chopped (white and green parts)
  • 2 teaspoons sriracha, or more to taste

For the Banh Mi Burgers

  • 2 teaspoons toasted sesame oil (optional)
  • 4 brioche buns, toasted
  • ½ cup quick-pickled vegetables, drained
  • ¼ cup cilantro, roughly chopped
  • 1 jalapeño, thinly sliced (optional)
  • 2 Persian cucumbers, sliced

METHOD

  • Prepare the Pork Patties: In a large bowl, combine the ground pork, basil, garlic, green onions, fish sauce, sriracha, sugar, cornstarch, black pepper, and salt. Mix thoroughly with your hands and shape the mixture into 4 patties, each about ⅓-inch thick.
  • Make the Sriracha Mayo: In a small bowl, whisk together mayonnaise, green onions, and sriracha until smooth. Adjust sriracha to your spice preference.
  • Cook the Patties: Heat sesame oil (if using) in a large cast-iron skillet over medium heat. Once the oil shimmers, add the patties and cook undisturbed for about 5 minutes per side, until browned and the internal temperature reaches 160°F on an instant-read thermometer.
  • Assemble the Burgers: Spread 1 tablespoon of sriracha mayo on the toasted sides of both the top and bottom brioche buns. Layer the bottom buns with pickled vegetables, cilantro, and jalapeño slices (if using). Add a pork patty, top with cucumber slices, and finish with the top bun, sauce-side down.
  • Serve Warm: Repeat the process with the remaining ingredients and serve the burgers warm.
