INGREDIENTS
- 1 large onion
- 1 tbsp canola oil
- Salt to taste
- 2 lbs lean ground beef
- 1 28 oz can of whole tomatoes (pureed)
- 1 box macaroni
- 1 cup grated cheddar and mozzarella cheeses
- Optional seasonings: black pepper, oregano, cumin, coriander, garlic, hot smoked paprika, chili powder, fish sauce, etc.
INSTRUCTIONS
- Cook the Onion and Beef: Sweat the onion in canola oil with a pinch of salt, then add ground beef, breaking it up as it cooks. Add additional salt and any desired seasonings. Stir in pureed tomatoes and bring to a simmer. Reduce heat and cook for 1 hour.
- Cook the Macaroni: Cook the macaroni until half-done, then drain and add it to the tomato mixture. Stir well, adjust seasoning, and let the flavors meld. Transfer to a baking dish and cover with foil. This can be refrigerated or frozen.
- Bake and Broil: Bake in a 400°F (205°C) oven until hot (about 45 minutes). Before serving, remove the foil, top with cheese, and broil until bubbly and golden.
