INGREDIENTS

  • 1 ½ pounds lean ground beef or turkey
  • ½ cup finely chopped white onion
  • 1 tablespoon minced garlic
  • 1 cup seasoned bread crumbs
  • 1 tablespoon Worcestershire sauce
  • 1 large egg, lightly beaten
  • ⅓ cup cottage cheese
  • ½ cup BBQ sauce
  • 2 pounds potatoes, peeled and diced
  • ½ cup unsalted butter
  • ½ cup sour cream
  • ½ cup warm milk or half-and-half
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 6 slices thick bacon, cooked and crumbled
  • 1 ½ cups shredded cheddar cheese

INSTRUCTIONS

  • Preheat the oven to 375°F and lightly coat a 9×13-inch baking dish with nonstick cooking spray.
  • In a large bowl, mix the ground beef or turkey, chopped onion, minced garlic, bread crumbs, Worcestershire sauce, beaten egg, cottage cheese, and BBQ sauce until fully combined.
  • Spread the meat mixture evenly into the prepared baking dish. Bake for 30 minutes in the preheated oven.
  • Meanwhile, cook the diced potatoes in a pot of water over medium heat until tender. Drain the potatoes and return them to the pot.
  • Add the butter to the potatoes and mash until smooth. Mix in the sour cream, warm milk or half-and-half, salt, and pepper until creamy and well-blended.
  • Once the meatloaf has baked for 30 minutes, carefully drain any excess grease from the pan.
  • Spread the mashed potatoes evenly over the cooked meatloaf. Sprinkle the top with shredded cheddar cheese and crumbled bacon.
  • Return the casserole to the oven and bake for an additional 15 minutes, or until the potatoes are heated through and the cheese is melted and bubbly.
  • Remove from the oven and let the casserole rest for a few minutes before serving. Enjoy!
