KOREAN CHEESE PANCAKE

INGREDIENTS

  • 250 g peeled potatoes
  • 50 g mozzarella cheese, shredded or cubed
  • 20 g brown sugar
  • 25 g cornstarch (or cornflour)
  • Cooking oil
  • Pinch of salt

INSTRUCTIONS

Step 1: Prepare the Potatoes

  • Peel and grate the potatoes.
  • Squeeze out the excess water using a kitchen towel, then set them aside.

Step 2: Mix the Ingredients

  • In a mixing bowl, combine the grated potatoes, brown sugar, cornstarch, and a pinch of salt.
  • Stir until the mixture forms a dough-like consistency.

Step 3: Shape the Pancakes

  • Divide the potato mixture into small portions.
  • Flatten each portion into a disc.
  • Place a small amount of mozzarella cheese in the center of each disc, then fold the edges over the cheese to seal it inside.
  • Shape it into a ball, then flatten it slightly into a pancake.

Step 4: Cook the Pancakes

  • Heat cooking oil in a frying pan over medium heat.
  • Fry each pancake until golden brown and crispy on both sides, about 3-4 minutes per side.

Serve: Drain the cooked pancakes on paper towels and serve them hot.
