MANDARIN JAM

This simple Mandarin Jam (or Mandarin Marmalade) recipe is perfect for making the most of an abundance of mandarins.

INGREDIENTS

  • 2 ½ cups mandarins (peeled, roughly chopped, and seeded — about 4-5 mandarins)
  • ½ lemon (peeled, chopped, and seeded)
  • 2 cups water
  • 500 grams jam-setting sugar

INSTRUCTIONS

  • Prepare the fruit
    • Peel the mandarins, removing any loose pith.
    • Roughly chop the mandarins into smaller segments (about 4-5 pieces per segment), discarding seeds. Any stray seeds floating during boiling can be removed later.
  • Combine ingredients
    • Place the chopped mandarins and lemon pieces into a saucepan. Add water.
  • Cook the fruit
    • Bring the mixture to a boil over medium heat. Let it boil uncovered for 10 minutes.
  • Add sugar and boil
    • Stir in the jam-setting sugar and continue boiling. Cook for 15-25 minutes, stirring occasionally, until the mixture thickens and jellies.
    • The jam is ready when it turns pale golden, slightly thickens, and begins to “grab” the bottom of the pan while stirring.
  • Store the jam
    • Pour the hot jam into a large sterilized jar. Seal tightly with a lid and let it cool to room temperature.
    • Store in the refrigerator and enjoy within one month.
