PEANUT BUTTER GREEK YOGURT BITES

These peanut butter Greek yogurt bites are a delightful treat, featuring a smooth and creamy yogurt center wrapped in a crisp chocolate shell.

INGREDIENTS

  • ½ cup full-fat Greek yogurt
  • ¼ cup peanut butter powder (PB Fit, PB2, or Clean Simple Eats)
  • 1 tablespoon peanut butter
  • ½ tablespoon maple syrup
  • ½ cup Lily’s dark chocolate chips
  • 1 teaspoon coconut oil
  • Flaky sea salt (optional, for topping)

INSTRUCTIONS

  • In a bowl, mix together the Greek yogurt, peanut butter powder, peanut butter, and maple syrup until smooth.
  • Using a medium cookie scoop, portion the mixture onto a parchment-lined plate or small baking tray, forming about 6 bites.
  • Freeze for 10-20 minutes, or until firm to the touch.
  • Meanwhile, melt the chocolate chips with coconut oil.
  • Dip each frozen yogurt bite into the melted chocolate, ensuring they are fully coated.
  • Sprinkle with flaky sea salt if desired, then place in the fridge until the chocolate sets.
  • Enjoy immediately or store in the fridge for 3-4 days.
