HOW TO MAKE OVER MEDIUM EGGS

With years of home cooking under my belt, I’ve mastered the art of cooking eggs for my family. If you’re aiming to achieve the perfect over-medium fried egg, these simple steps will guide you to success.

Ingredients

  • ½ tablespoon butter
  • 1 egg
  • Salt
  • Pepper

Instructions

  • Heat a pan over low heat.
  • Once the pan is warm, add ½ tablespoon of butter and let it melt and bubble.
  • Crack the egg into the pan over the melted butter.
  • Season with a pinch of salt and pepper.
  • Cook on low heat until most of the egg white has set.
  • Gently flip the egg and cook for 1-2 minutes.
  • Flip the egg back to the original side and cook for an additional 1-2 minutes.
  • Remove the egg from the pan and place it on a plate.

Notes

  • Keep the pan on low heat for even cooking.
  • You can use butter, olive oil, or rendered bacon grease for frying.
  • Low heat is key to avoid overcooking the egg whites before the yolk sets.
  • Use a thin spatula to carefully lift the egg.
  • Cook one or two eggs at a time to avoid overcrowding the pan.
  • If cooking multiple eggs, wipe the pan clean between batches.
