INGREDIENTS
- 1 ½ cups Pearl Couscous
- 1-2 cloves Garlic (minced)
- 2 tbsp vegan butter, olive oil, or real butter
- 1 ¾ cups vegetable broth
- 1 tbsp fresh Parsley (finely minced)
- 1 tsp Lemon zest
- 1 ½ tbsp Chives (chopped)

INSTRUCTIONS
- Begin by finely mincing the garlic, parsley, and chopping the chives. Zest the lemon.
- Turn on your Instant Pot to the ‘Sauté’ function and let it heat for about 30 seconds.
- Add your butter (or oil) to the pot. Once melted, add the garlic and sauté for 30 seconds until fragrant.
- Stir in the pearl couscous and continue stirring for 1 minute to toast it lightly.
- Pour in the vegetable broth and add the minced parsley. Stir gently to combine.
- Press CANCEL to stop the sautéing. Lock the lid on the Instant Pot and set the valve to ‘Sealing.’
- Set to cook on HIGH pressure for 3 minutes. It will take a few minutes to come to pressure.
- Once the 3 minutes are up, let the Instant Pot naturally release for 5 minutes. After that, flip the valve to ‘Venting’ to release any remaining pressure and remove the lid.
- Fluff the couscous with a wooden spoon, fork, or spatula. Stir in lemon zest, half of the chives, and season with salt and pepper to taste.
- Serve hot or allow to cool for salads. Garnish with the remaining chives and lemon zest.
NOTES
- For a zesty kick, add the juice of half a lemon along with the zest!
- Don’t skip toasting the couscous; it adds a nutty flavor that makes this dish even more delicious.
