Ingredients
- 10 oz thick sliced bacon (8 slices, or use regular sliced if preferred)
- 1/3 cup sriracha chili sauce
- 2 tbsp honey
- 1/2 tsp brown sugar
- Coarse ground pepper to taste
- Salt to taste
- Additional brown sugar to taste (optional)
Instructions
- Preheat your oven to 200°F (95°C).
- In a bowl, whisk together the sriracha, honey, and brown sugar.
- Brush or dip each slice of bacon into the sauce mixture, ensuring both sides are coated.
- Place the bacon slices on a baking rack, set over a cookie sheet to catch any grease. Make sure there’s at least a quarter-inch of space between each slice.
- Sprinkle each slice with coarse ground pepper and salt to taste. For a sweeter flavor, you can also add a pinch of brown sugar on top.
- Transfer the rack and cookie sheet to the oven and bake for 2-3 hours, occasionally blotting away grease if it begins to pool.
- If using a dehydrator, transfer the bacon to the dehydrator after 2-3 hours. Set the temperature to around 160-190°F (70-88°C), or continue at 200°F (95°C) in the oven.
- Continue cooking for another 2-3 hours, either in the dehydrator or oven, until the bacon jerky reaches your desired texture. The dehydrator will cook it faster.
- Once done, remove the bacon jerky from the oven or dehydrator and allow it to cool completely on a plate. Use a paper towel to blot off any excess grease.
- Store any leftover bacon jerky in an airtight plastic bag or food-safe container.
