HEALTHY GROUND BEEF

This healthy ground beef, quinoa, and salad bowl is quick to prepare in just 30 minutes. It’s perfect for meal prep and offers a delicious blend of spice, freshness, and comfort.

Ingredients

  • 1 serving of ground beef dinner skillet
  • 1-2 tbsp cashew sauce
  • For the Salad:
    • 1 cup tomatoes, chopped
    • 1 cucumber, sliced
    • 1 scallion, chopped
    • A handful of olives, chopped
    • 1/2 cup spinach, chopped
    • 1 tbsp olive oil

Instructions

  • To make the salad, combine the cucumber, tomato, scallion, olives, spinach, olive oil, and a pinch of salt in a bowl. Toss to mix.
  • Assemble the bowl by adding a serving of ground beef dinner skillet, followed by the salad on the side. Drizzle with cashew sauce (or yogurt garlic sauce) and enjoy!

Notes:

  • If you eat dairy, you can substitute the cashew sauce with a simple yogurt garlic sauce. Just mix 1/2 cup yogurt, a minced garlic clove, and a pinch of salt together.
  • This recipe is for one serving. For meal prep, you’ll need to increase the vegetable portions accordingly.
