PIONEER WOMAN LEMON BARS

Ingredients

FOR THE SHORTBREAD CRUST

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ teaspoon salt
  • 2 sticks (1 cup) salted butter, cut into small cubes

  • 1½ cups granulated sugar
  • ¼ cup all-purpose flour
  • 4 large eggs
  • Zest and juice of 4 medium-sized lemons
  • Powdered sugar, for sifting

Instructions

FOR THE CRUST

Preheat Oven: Preheat the oven to 350°F (175°C). Grease a 9-by-13-inch pan with butter. For a thicker crust, use a 9×9 pan.

Make the Crust:

  • In a bowl, stir together the flour, sugar, and salt.
  • Add the cubed butter and use a pastry cutter to mix until the mixture resembles fine crumbs.
  • Press the mixture into the prepared pan and bake until golden around the edges, about 20 minutes.

    FOR THE FILLING

    Prepare the Filling:

    • In a separate bowl, stir together the sugar and flour.
    • Crack in the eggs and whisk until combined.
    • Add the lemon zest and juice, mixing until fully combined.

    Bake:

    • Pour the lemon filling over the baked crust. Bake for an additional 20-30 minutes, or until the filling is set and doesn’t jiggle.

    Cool and Serve:

    • Allow the lemon bars to cool in the fridge for at least 2 hours.
    • Before serving, sift powdered sugar over the top and cut into squares.
