INGREDIENTS
- 3 ripe bananas (the more spots, the better)
- 2 eggs
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 tbsp honey
- 1/2 tsp vanilla extract
- 1/2 cup melted butter
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- A dash of ginger
- 1.5 cups flour
- 1 tsp baking soda
- 1/2 cup chopped walnuts or pecans
INSTRUCTIONS
- Preheat your oven to 350°F.
- In a large bowl or using a stand mixer, mash the bananas until smooth.
- Add eggs, honey, vanilla, and melted butter to the mashed bananas. Mix until well combined.
- Stir in the sugar, salt, and spices, mixing until everything is evenly incorporated.
- Add the baking soda and flour, stirring gently to combine. Fold in the chopped nuts.
- For mini muffins, bake for 20-25 minutes; for regular muffins, bake for 30-35 minutes. For a loaf, bake for 55 minutes or until a toothpick inserted in the center comes out clean.
