FASOLADA – GREEK WHITE BEAN SOUP

Fasolada, a classic Greek white bean soup, is a cherished staple of Greek cuisine and culture. This hearty and filling dish is ideal for cold weather, offering warmth and comfort on the chilliest days. You’ll be delighted by the simplicity and rich flavor of this satisfying meal.

INGREDIENTS

Soup Base

  • 2 lb dry white beans
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 3 carrots, cut into 1/4-inch pieces
  • 2 celery stalks, cut into 1/4-inch pieces
  • 1/2 cup extra virgin olive oil
  • 32 oz chicken or vegetable broth
  • 28 oz crushed or chopped tomatoes
  • 2 tablespoons tomato paste
  • 1/2 cup parsley, roughly chopped
  • 1 tablespoon dried oregano
  • Sea salt
  • Freshly ground black pepper

For Serving

  • 1 tablespoon parsley, roughly chopped (optional)
  • 1 tablespoon chili pepper flakes (optional)

INSTRUCTIONS

Step 1: Soak the Beans

  • Place the dry beans in a large pot and cover them generously with water. Add a pinch of salt and stir. Let the beans soak for 10 hours or overnight.
  • When ready to cook, rinse the beans thoroughly. Return them to the pot, cover with fresh water, and cook on high heat for 20 minutes.
  • Drain the beans and set them aside.

Step 2: Prepare the Fasolada

  • Heat 2-3 tablespoons of olive oil in a large stockpot over medium-high heat. Sauté the diced onions for 2-3 minutes until translucent.
  • Add the garlic, carrots, celery, and tomato paste. Stir well, seasoning with sea salt, freshly ground black pepper, and dried oregano.
  • Sauté for another 2-3 minutes to enhance the flavors.
  • Add the drained beans and the crushed tomatoes. Stir to combine, then pour in the broth and parsley. Add enough water to cover the beans by about an inch.
  • Mix everything well and cook for 60 minutes or until the beans are tender. Add more water or broth as needed during cooking.
  • Adjust the seasoning with additional sea salt and pepper to taste.

NOTES

  • Serve in bowls, garnished with chili pepper flakes and a side of warm bread for dipping.
