CHOCOLATE CHIP COCONUT FLOUR BANANA BREAD

This coconut flour banana bread is absolutely amazing! It’s gluten-free, dairy-free, naturally sweetened with bananas, and comes together easily in just one bowl with 10 simple ingredients.

INGREDIENTS

  • 1 cup mashed banana*
  • 3 eggs
  • ½ cup almond butter
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • ½ cup (60 grams) coconut flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ½ cup dairy-free mini chocolate chips

INSTRUCTIONS

  • Preheat the oven to 350°F (175°C).
  • Prepare a loaf pan by greasing it with coconut oil or lining it with parchment paper.
  • In a large mixing bowl, combine the mashed bananas, eggs, almond butter, melted coconut oil, and vanilla extract. Mix well.
  • Add the dry ingredients (coconut flour, baking powder, baking soda, and sea salt) to the bowl. Stir until just combined, then gently fold in the chocolate chips.
  • Pour the batter into the prepared loaf pan, spreading it evenly.
  • Bake for 45 minutes, or until the bread turns golden brown and a toothpick inserted in the center comes out clean.
  • Remove the loaf from the oven and let it cool in the pan on a wire rack for 20-30 minutes. Once cooled, remove the bread from the pan. If the pan was properly greased or lined, it should release easily.
  • Slice the bread using a bread knife, serve, and enjoy!

NOTES

  • Mashed Bananas: You’ll need 2-3 bananas to make 1 cup, depending on their size.
  • Storage: Keep leftovers in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate or freeze.
