INGREDIENTS

  • 3 ripe bananas (the more spots, the better)
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tbsp honey
  • 1/2 tsp vanilla extract
  • 1/2 cup melted butter
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • A dash of ginger
  • 1.5 cups flour
  • 1 tsp baking soda
  • 1/2 cup chopped walnuts or pecans

INSTRUCTIONS

  • Preheat your oven to 350°F.
  • In a large bowl or using a stand mixer, mash the bananas until smooth.
  • Add eggs, honey, vanilla, and melted butter to the mashed bananas. Mix until well combined.
  • Stir in the sugar, salt, and spices, mixing until everything is evenly incorporated.
  • Add the baking soda and flour, stirring gently to combine. Fold in the chopped nuts.
  • For mini muffins, bake for 20-25 minutes; for regular muffins, bake for 30-35 minutes. For a loaf, bake for 55 minutes or until a toothpick inserted in the center comes out clean.
