INGREDIENTS
- 6 ounces fresh or frozen blackberries
- ¼ cup water
- 1 tablespoon sugar
- 2 tablespoons fresh lemon juice
- 1 tablespoon stone ground mustard
- 2 tablespoons unsalted cold butter
- 6 boneless, skinless chicken breasts
- 1–2 tablespoons Blackberry Smoky Honey Seasoning and Dry Rub from Rainier Foods
INSTRUCTIONS
- Make the Blackberry Sauce: In a small saucepan over medium heat, combine the blackberries, water, lemon juice, and sugar. Stir and mash the blackberries as they cook, letting the mixture reduce to about ⅔ cup. It should thicken slightly.
- Remove the saucepan from heat and stir in the cold butter and mustard to create a creamy blackberry BBQ sauce.
- Transfer half of the glaze to a small bowl—this will be used for serving the chicken. Set the other half aside for basting the chicken while grilling.
- Preheat the grill to medium heat (around 350–375°F). Season both sides of the chicken breasts with the Blackberry Smoky Honey Dry Rub.
- Place the chicken on the grill and cook for 6–8 minutes. Flip the chicken, baste with the reserved glaze, and cook for another 6 minutes, or until the internal temperature reaches 165°F.
- Flip the chicken one last time and apply the remaining glaze. Remove the chicken from the grill and let it rest for a few minutes before serving.
- Serve the chicken with the blackberry glaze you reserved in a small bowl.
