POTATO PATTIES

INGREDIENTS

  • 2 cups cold leftover mashed potatoes
  • 1 large egg
  • ⅓ cup grated yellow onion
  • ½ cup all-purpose flour
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • About 1 ½ cups canola oil

INSTRUCTIONS

  • Mix the Base: In a large mixing bowl, combine the cold mashed potatoes and egg until the egg is fully incorporated.
  • Add the Flavor: Stir in the grated onion, flour, salt, and pepper, mixing gently with a fork until evenly combined.
  • Prepare the Oil: Heat about ½ inch of canola oil in a large skillet over medium heat until it reaches 350°F.
  • Form the Patties: Scoop just under ½ cup of the potato mixture for each patty and carefully place it into the hot oil. Flatten each mound gently with a spatula to form a patty shape. Cook no more than 3–4 patties at a time to avoid overcrowding.
  • Fry to Perfection: Cook the patties for 2½ to 3 minutes on one side until golden brown. Use a spatula (and a second utensil for support if needed) to flip each patty. Fry for another 2 to 2½ minutes on the other side.
  • Cool and Serve: Transfer the cooked patties to a cooling rack placed over paper towels to drain excess oil. Let them cool slightly, serve, and enjoy!
