This simple Keto Egg & Cream Cheese Bake is a versatile and delicious option for breakfast, lunch, or dinner. Perfect for meal prepping or making the most of leftover ingredients, it’s an easy low-carb recipe to whip up anytime!
INGREDIENTS
- 4 ounces softened cream cheese
- 5 large eggs
- ⅓ cup unsweetened almond milk
- ½ teaspoon salt
- ½ teaspoon ground white pepper
- 1 cup diced ham
- ¼ cup sliced scallions
- 1 cup shredded cheddar cheese
INSTRUCTIONS
- Preheat your oven to 175°C (350°F).
- In a large jug, blend the cream cheese and 2 eggs using an immersion blender until smooth.
- Add the remaining eggs, almond milk, salt, and white pepper, and blend again until fully combined.
- Grease an 8-inch square baking dish and layer the ham, scallions, and half of the cheddar cheese on the bottom.
- Pour the egg mixture over the top, gently stirring to evenly distribute the fillings. Sprinkle the remaining cheddar cheese over the surface.
- Bake for 35-45 minutes, or until the top is golden brown and the bake is puffed up. The center should be set and not jiggle when moved.
- Allow the dish to cool for 5 minutes before slicing. Note: The bake will deflate slightly as it cools, releasing steam.
- Slice into quarters and serve hot!
