INGREDIENTS
For the Upside-Down Layer:
- 12 tablespoons butter
- 1 1/2 cups brown sugar
- 4 bananas, sliced lengthwise into 1/2-inch strips
For the Cake:
- 2 mashed bananas
- 6 tablespoons butter, melted
- 2 eggs, at room temperature
- 2/3 cup plain, non-fat Greek yogurt
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 4 teaspoons baking powder
- 1 teaspoon salt
- 2 cups all-purpose flour

INSTRUCTIONS
- Preheat the oven to 350°F and grease a 9×13-inch pan with butter.
- In a small saucepan over medium heat, melt the butter and brown sugar together for about 2 minutes until the mixture becomes slightly glossy. Pour it evenly into the prepared pan. Layer the sliced bananas on top of the sugar mixture and set aside.
- In a large bowl, combine the mashed bananas, melted butter, eggs, Greek yogurt, granulated sugar, and vanilla extract. Mix until well combined. Stir in the baking powder and salt, then gradually add the flour, mixing until just incorporated.
- Pour the batter over the banana layer, spreading it evenly. Bake in the oven for 30 minutes, or until the top is golden brown along the edges and the brown sugar mixture starts to bubble around the pan’s edges.
- Let the cake cool for 10 minutes before inverting it onto a large tray. Serve warm, optionally topped with a scoop of vanilla ice cream!
