CAULIFLOWER CHICKEN FRIED RICE

INGREDIENTS

  • 3 tbsp oil* (divided)
  • 1 lb ground chicken (dark meat)
  • 3 tbsp soy sauce (divided)
  • 2 eggs, beaten
  • ½ cup chopped carrot
  • ½ cup chopped yellow onion
  • ½ cup frozen peas, thawed
  • 3 scallions, sliced
  • 2 cloves garlic, minced (about 1 tbsp)
  • 3 to 4 cups cauliflower rice
  • 1 tbsp sesame oil

INSTRUCTIONS

  • Cook the Chicken:
    • Heat a nonstick skillet or wok over medium-high heat and add 1 tbsp oil.
    • Add the ground chicken, breaking it up into small pieces with a spatula. Cook for about 5 minutes until fully cooked and no pink remains.
    • Stir in 1 tbsp soy sauce, mix well, then transfer the chicken to a separate bowl.
  • Prepare the Eggs:
    • Add another 1 tbsp oil to the pan. Pour in the beaten eggs and let them cook undisturbed for about 2 minutes.
    • Flip and cook for another minute, then remove to a cutting board and chop into small pieces.
  • Sauté the Vegetables:
    • Add the remaining 1 tbsp oil to the pan, followed by the chopped carrot and onion.
    • Stir in 1 tbsp soy sauce and cook for about 5 minutes, until slightly softened.
    • Add the peas, scallions, and garlic, and cook for another 2 minutes until the scallions soften.
  • Add the Cauliflower Rice:
    • Stir in the cauliflower rice and the remaining 1 tbsp soy sauce.
    • Cook for 3-4 minutes, stirring occasionally, until the cauliflower softens slightly.
  • Combine Everything:
    • Return the cooked chicken to the pan, then drizzle in the sesame oil. Stir well for about 30 seconds.
    • Add the chopped egg back to the pan, mix, and serve immediately.

NOTES

  • Any neutral oil, such as grapeseed, light olive oil, or canola oil, works well.
  • Making Cauliflower Rice: You can easily make your own or buy pre-riced cauliflower from stores like Trader Joe’s or Whole Foods. A 16-ounce bag typically yields about 3.5 cups.
