- ½ cup full-fat coconut milk
- ¼ cup plain yogurt
- 1 Tbsp sweetener (optional)
INSTRUCTIONS
- Add all ingredients to a blender (such as a Vitamix or Nutribullet). Place the softer ingredients closer to the blade and the frozen ingredients farther from it.
- Blend for 1-2 minutes or until smooth and creamy.
- Serve with diced pineapple, shredded coconut, and a straw.
Yield: This recipe makes two 8-ounce smoothies or one large 16-ounce smoothie.
NOTES
- Milk: You can substitute regular milk, oat milk, cashew milk, almond milk, or soy milk if you prefer not to use coconut milk.
- Yogurt: Feel free to use Greek yogurt, goat yogurt, or any plant-based or nut-based yogurt as a substitute.
- Prep-Ahead: To prepare in advance, measure out ingredients and store them in a freezer-safe bag or airtight container. They can be kept for up to 3-4 months in the freezer. Let them thaw for 20-30 minutes before blending.
