HEALTHY HOMEMADE BUTTERFINGERS

Who says healthy can’t be delicious? This homemade Butterfingers recipe proves that you can enjoy a decadent treat without compromising your health goals. With simple ingredients and easy steps, you’ll have a batch of homemade candy bars in no time.

Ingredients:

  • 1 cup peanut butter
  • 1/3 cup honey
  • 1/2 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 + 3/4 cups cornflake cereal
  • 1 cup chocolate chips (dairy-free if needed)
  • 1 tsp coconut oil

Instructions:

  • In a saucepan over medium-low heat, combine the peanut butter, honey, vanilla extract, and sea salt. Stir occasionally for 2-4 minutes until the mixture is heated through and smooth.
  • Transfer the peanut butter mixture to a large mixing bowl and add the cornflake cereal. Stir everything together until well combined, gently crushing some of the cereal as you mix to ensure all of it gets coated.
  • Shape the mixture into 12-14 logs and place them on a parchment-lined plate or baking sheet. Freeze for 1 hour to set.
  • Once the logs are frozen, melt the chocolate chips and coconut oil together. You can do this in the microwave in short bursts or on the stove, being careful not to burn the chocolate.
  • Dip each frozen log into the melted chocolate, allowing any excess to drip off. Place the logs back on the parchment-lined plate and return to the freezer for about 10 minutes to let the chocolate set.
  • Store in the refrigerator or freezer until ready to enjoy.
