INGREDIENTS

For the Bang Bang Sauce

  • 1 cup mayonnaise
  • ½ cup sweet chili sauce
  • 1 tbsp hot sauce (Sriracha recommended)
  • 2 tbsp honey or sugar
  • Salt and pepper, to taste

For the Chicken

  • 1 ½ pounds boneless, skinless chicken tenderloins
  • 2 cups plain panko breadcrumbs
  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 cup buttermilk
  • 1 large egg (room temperature)
  • 1 tbsp hot sauce (Sriracha recommended)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • ¼ tsp black pepper
  • Oil for frying
  • Chopped parsley, for garnish

INSTRUCTIONS

  • Make the Bang Bang Sauce: In a medium bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and honey until fully combined. Adjust the amount of Sriracha based on your preferred heat level. Set the sauce aside in the refrigerator to allow the flavors to meld.
  • Prepare the Chicken: In a large bowl, whisk together buttermilk, flour, cornstarch, egg, Sriracha, garlic powder, paprika, salt, black pepper, and cayenne pepper (if using) to form a smooth batter.
  • Add the chicken tenderloins to the batter, ensuring each piece is well coated.
  • In a separate shallow dish, spread out the panko breadcrumbs. Carefully dredge each battered chicken tenderloin in the breadcrumbs, pressing gently to ensure an even coating. Transfer the coated chicken to a baking sheet.
