INGREDIENTS
- 1 pound boneless, skinless chicken breasts, thinly sliced
- ¼ cup cornstarch
- ¼ cup soy sauce
- ¼ cup Chinese cooking wine (Shaoxing wine)
- 3 tablespoons brown sugar
- ½ cup vegetable or peanut oil
- 3 cloves garlic, minced
- 2 jalapenos, thinly sliced
INSTRUCTIONS
- In a bowl, toss the chicken with cornstarch until well-coated. Let it marinate for about 5 minutes.
- In a separate bowl, whisk together the soy sauce, Chinese cooking wine, and brown sugar until the sugar dissolves. Set aside.
- Heat the oil in a wok or large skillet over medium-high heat. Add the chicken in batches, frying until crispy and fully cooked. Avoid overcrowding the pan. Remove the chicken with a slotted spoon and drain on paper towels.
- Discard most of the oil, leaving about 1 tablespoon in the skillet. Add the garlic and jalapenos, cooking for 30-40 seconds until fragrant.
- Return the chicken to the skillet and pour in the soy sauce mixture. Stir and cook for 2-3 minutes, or until the sauce thickens and everything is heated through. Serve hot.
NOTES
- For even cooking, cut the chicken into uniform pieces.
- If Chinese cooking wine is unavailable, you can use dry sherry as a substitute.
