ASIAN JALAPENO CHICKEN

Asian Jalapeno Chicken is a quick and simple dish that comes together in under 30 minutes! With a perfect balance of sweet, savory, and spicy flavors, it’s a satisfying meal that’s sure to please your taste buds!

INGREDIENTS

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • ¼ cup cornstarch
  • ¼ cup soy sauce
  • ¼ cup Chinese cooking wine (Shaoxing wine)
  • 3 tablespoons brown sugar
  • ½ cup vegetable or peanut oil
  • 3 cloves garlic, minced
  • 2 jalapenos, thinly sliced

INSTRUCTIONS

  • In a bowl, toss the chicken with cornstarch until well-coated. Let it marinate for about 5 minutes.
  • In a separate bowl, whisk together the soy sauce, Chinese cooking wine, and brown sugar until the sugar dissolves. Set aside.
  • Heat the oil in a wok or large skillet over medium-high heat. Add the chicken in batches, frying until crispy and fully cooked. Avoid overcrowding the pan. Remove the chicken with a slotted spoon and drain on paper towels.
  • Discard most of the oil, leaving about 1 tablespoon in the skillet. Add the garlic and jalapenos, cooking for 30-40 seconds until fragrant.
  • Return the chicken to the skillet and pour in the soy sauce mixture. Stir and cook for 2-3 minutes, or until the sauce thickens and everything is heated through. Serve hot.

NOTES

  • For even cooking, cut the chicken into uniform pieces.
  • If Chinese cooking wine is unavailable, you can use dry sherry as a substitute.
