WET BURRITOS

A Wet Burrito is a delicious twist on the traditional burrito, featuring a generous coating of savory sauce, usually red chili or enchilada sauce, and baked until perfectly moist and flavorful. Unlike the regular burrito, which is portable and typically eaten by hand, the Wet Burrito is served on a plate and requires a fork and knife to fully enjoy its saucy, hearty goodness.

INGREDIENTS

  • 1 lb ground beef
  • 1/2 cup finely chopped onion
  • 2 tsp minced garlic
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4.5 oz diced green chile peppers
  • 16 oz refried beans
  • 8 oz tomato sauce
  • 10 oz enchilada sauce
  • 15 oz Hormel no-beans chili
  • 6 large flour tortillas (approx. 12 inches each)
  • 2 cups shredded lettuce
  • 3 cups shredded Mexican blend cheese
  • Chopped green onions (for garnish)
  • Optional toppings (sour cream, tomatoes, etc.)

INSTRUCTIONS

  • Preheat the Oven: Set your oven to 400°F to get it ready for baking.
  • Cook the Meat Mixture: In a medium skillet, cook the ground beef and chopped onions over medium-high heat until browned and the onions are soft. Drain off any excess grease. Add the minced garlic, cumin, salt, and pepper. Stir in the diced green chilies and refried beans, mixing everything together until well combined. Keep the mixture warm.
  • Prepare the Sauce: In a separate saucepan, combine the tomato sauce, Hormel no-beans chili, and enchilada sauce. Stir constantly over medium heat until the sauce is warm and evenly mixed.
  • Assemble the Burritos: Lay out the flour tortillas and divide the beef and bean mixture into six equal portions. Spoon one portion onto the center of each tortilla, then top with a sprinkle of shredded cheese and some shredded lettuce (you can also add other vegetables if you like). Fold the sides of the tortilla over the filling and roll it up tightly to prevent spillage.
  • Set Up the Dish: Grease two 9×13-inch baking dishes. Place the prepared burritos seam-side down in the dishes. Pour the sauce over the burritos, ensuring they are generously coated. Top with the remaining shredded cheese.
  • Bake: Place the dishes in the preheated oven and bake for 15-20 minutes, or until the burritos are heated through and the cheese is melted and bubbly.
  • Finish and Serve: Top your burritos with extra lettuce, tomatoes, sour cream, and a sprinkle of chopped green onions. Feel free to customize with any other toppings you enjoy.

Notes

  • For Smaller Portions: If you’re cooking for two, you can freeze any leftover burritos. To reheat, let them thaw completely and then bake at 400°F for 15-20 minutes, until heated through.
