  • 1 tsp baking soda
  • 1 tsp salt
  • 3 tbsp brewer’s yeast powder
  • 1 tbsp ground flax seeds
  • 1 cup unsalted butter, room temperature
  • 1 cup packed light brown sugar
  • 1/2 cup sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups old-fashioned oats
  • 2 cups semi-sweet or dark chocolate chips
  • Pinch of flaky salt (optional)

INSTRUCTIONS

  • Prep: Preheat the oven to 325°F. Line or spray a baking sheet with non-stick spray.
  • Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, brewer’s yeast, and ground flax seeds.
  • Wet Ingredients: In a large bowl, beat the butter with a hand-held or stand mixer for about 1 minute. Add the brown sugar and granulated sugar, and beat for 1-2 minutes until well combined. Add the eggs and vanilla, then continue mixing for 3-6 minutes, until the mixture is light and fluffy.
  • Combine: Slowly add half of the dry ingredients into the wet ingredients and mix on low until just combined. Add the remaining dry ingredients and mix until incorporated.
  • Add Ingredients: Stir in the oats and chocolate chips using a large spoon or mixing on low speed until fully combined.
  • Drop Cookie Dough: Use two spoons or a cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet.
  • Bake: Bake for 10-12 minutes or until the edges are golden brown. If using, sprinkle flaky salt over the cookies while they’re still hot.
  • Cool: Let the cookies cool on the baking sheet for 2-3 minutes before transferring to a cooling rack to cool completely.

Enjoy!
