SKILLET MAPLE GLAZED CHICKEN WITH SWEET POTATO HASH

INGREDIENTS

For the Chicken:

  • 1 lb boneless, skinless chicken breast cutlets
  • Salt and pepper, to taste
  • 1/2 cup white whole wheat flour
  • 2 tablespoons olive oil

For the Sweet Potatoes:

  • 1 tablespoon olive oil
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper, to taste

For the Maple Glaze:

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 3 tablespoons balsamic vinegar
  • 1/4 cup maple syrup
  • Salt and pepper, to taste

INSTRUCTIONS

Prepare the Chicken: Pat the chicken dry and season both sides with salt and pepper. Dredge the chicken in flour, coating evenly. Heat olive oil in a large skillet over medium-high heat until shimmering. Add the chicken and sear for 3-4 minutes per side until golden brown. Transfer the chicken to a plate and set aside.

Cook the Sweet Potatoes: In the same skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sweet potatoes, onion, and garlic. Sauté for 5-8 minutes, stirring occasionally, until the vegetables are golden and slightly caramelized (sweet potatoes will not be fully cooked yet). Stir in paprika and season with salt and pepper to taste.

Combine Chicken and Sweet Potatoes: Nestle the chicken breasts back into the skillet with the sweet potatoes. Transfer the skillet to a preheated oven and bake at 400°F (200°C) for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sweet potatoes are tender.

Make the Maple Glaze: While the chicken bakes, heat 1 tablespoon of olive oil in a small skillet over medium-high heat. Add garlic and sauté until fragrant, about 30 seconds. Stir in balsamic vinegar and maple syrup, then season with salt and pepper. Bring the mixture to a boil, then reduce heat to medium and simmer for about 10 minutes, stirring occasionally, until the sauce thickens.

Serve: Once the chicken and sweet potatoes are done, drizzle the maple glaze over the top. Serve immediately and enjoy!
