These Chili and Honey Roasted Sweet Potatoes with a hint of lime are the ultimate balance of sweet and savory—perfect as a side dish or a post-workout snack!
INGREDIENTS
- 1 sweet potato, halved lengthwise
- 2 tsp olive oil
- 1 tbsp honey
- 1/2 tsp chili powder
- 1/2 tsp sweet or smoked paprika
- 1/2 tsp cayenne pepper (optional)
- Kosher salt and cracked black pepper
- 1 lime
- Fresh chopped parsley (optional)
INSTRUCTIONS
- Preheat oven to 400°F (200°C).
- Prep Sweet Potatoes: Brush each sweet potato half with olive oil, including the skin. Season thoroughly with kosher salt and cracked black pepper.
- Score and Season: Use a knife to score the flesh of the sweet potatoes. Sprinkle the top halves with chili powder, paprika, and cayenne pepper (if desired).
