WHOLE30 LOADED BREAKFAST POTATOES

INGREDIENTS

  • 1/2 lb ham, chopped into 1/2″ pieces
  • 1/2 lb bacon, chopped into 1/2″ pieces
  • 2 lbs Yukon gold potatoes, diced into 1/2″ pieces
  • 2 tbsp coconut oil (or avocado oil)
  • 2 tsp garlic salt
  • 2 cups finely chopped peppers and onions (fresh or thawed frozen)
  • Salsa or ketchup for serving (optional)

INSTRUCTIONS

  • In a large saucepan, cook the ham and bacon over medium heat until crispy (17-18 minutes). Remove and set aside.
  • Steam the potatoes with 1/4 cup water in a microwave-safe dish, covered, for 6 minutes. Drain and pat dry.
  • In the same saucepan, heat the coconut oil over medium-high. Add the potatoes in a single layer, sprinkle with garlic salt, and cook without stirring for 10 minutes to get crispy.
  • Flip the potatoes, add peppers and onions, and cook for another 10 minutes until veggies are tender and potatoes are crispy.
  • Add the cooked ham and bacon back to the pan, mix, and serve hot with salsa or ketchup if desired.
