INGREDIENTS
- 1/2 lb ham, chopped into 1/2″ pieces
- 1/2 lb bacon, chopped into 1/2″ pieces
- 2 lbs Yukon gold potatoes, diced into 1/2″ pieces
- 2 tbsp coconut oil (or avocado oil)
- 2 tsp garlic salt
- 2 cups finely chopped peppers and onions (fresh or thawed frozen)
- Salsa or ketchup for serving (optional)
INSTRUCTIONS
- In a large saucepan, cook the ham and bacon over medium heat until crispy (17-18 minutes). Remove and set aside.
- Steam the potatoes with 1/4 cup water in a microwave-safe dish, covered, for 6 minutes. Drain and pat dry.
