Veggie Pita Bread Pizza is a quick and effortless way to enjoy homemade pizza using pita bread as the crust, a simple no-cook sauce, and your favorite toppings. Ready in just 30 minutes—faster than takeout—and completely customizable to suit your taste!
INGREDIENTS
Pita Pizza
- 4 Greek pita breads
- ½ cup no-cook pizza sauce (recipe below)
- 2 cups shredded mozzarella cheese (or preferred cheese)
- 1 tbsp dried oregano or pizza seasoning
- Chili flakes (optional, to taste)
- Salt and pepper (to taste)
Toppings
- ½ red onion, sliced
- ½ bell pepper, sliced (mix of red and green)
- 2 mushrooms, sliced
- 10 cherry tomatoes, halved
- Pickled jalapeño slices (optional, to taste)
- 2-4 tbsp sweet corn (thawed if frozen)
- 5 olives, sliced
No-Cook Pizza Sauce
- 1 (15 oz) can tomato sauce (or store-bought tomato purée)
- ½ tsp dried oregano
- ½ tsp Italian seasoning
- ½ tsp salt
- ⅛ tsp black pepper (to taste)
- ½ tsp minced garlic (or garlic paste/granulated garlic)
- ½ tsp onion powder (optional)
- 1 tsp sugar

INSTRUCTIONS
Make the No-Cook Pizza Sauce
- In a mixing bowl, combine all pizza sauce ingredients: tomato sauce, oregano, Italian seasoning, salt, black pepper, garlic, onion powder, and sugar.
- Mix well and set aside. (Can be made ahead and stored in the fridge or freezer.)
Oven Method
- Preheat the oven to 400°F. Line a baking sheet with aluminum foil.
- Place pita breads on the baking sheet and spread 2 tbsp of pizza sauce over each.
- Sprinkle ½ cup of mozzarella cheese (or more as desired).
- Add toppings: red onions, bell peppers, mushrooms, cherry tomatoes, corn, olives, and jalapeños.
- Season with salt, pepper, oregano, and chili flakes (optional).
- Bake for 15 minutes, or until cheese is melted and slightly golden.
- Remove from the oven and let rest for 5 minutes before slicing into 4 triangles. Serve immediately.
Air Fryer Method
- Follow the same preparation steps as the oven method.
- Place in the air fryer and bake at 370°F for 5-7 minutes, or until cheese is melted and starting to brown.
- Slice into 4 triangles and serve immediately.
NOTES
- Storage: Best enjoyed fresh, but the pizza sauce can be made ahead and stored in an airtight container in the fridge for 4-5 days or frozen for later use.
- Reheating: Leftovers can be stored in an airtight container in the fridge for 2-3 days. Reheat in the oven at 350°F or air fry at 370°F for 2-3 minutes until hot.
- Substitutions: Use any veggies you like. You can also swap the homemade sauce for store-bought pizza sauce, marinara, or pesto.
