VEGAN BURRITO BOWL

This delicious vegan burrito bowl is packed with flavor, easy to prepare, and full of healthy ingredients! Start with a bed of crisp romaine lettuce, topped with cilantro lime rice and a zesty mix of black beans and corn. Customize it with your favorite toppings like guacamole, pico de gallo, vegan sour cream, and salsa. A perfect, quick plant-based meal for lunch or dinner!

INGREDIENTS

For Cilantro Lime Rice

  • 1 cup uncooked long-grain rice (~3 cups cooked)
  • 1/2 cup chopped cilantro
  • 2 tbsp freshly squeezed lime juice
  • 1/2 tsp salt (adjust to taste)

For Spicy Black Beans & Corn

  • 1 tbsp oil (olive, avocado, or coconut)
  • 1 small onion, diced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp chipotle powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For Easy Guacamole

  • 1 large ripe avocado
  • 1 tbsp freshly squeezed lime juice
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For Serving

  • Chopped romaine lettuce
  • Pico de gallo
  • Salsa (hot or mild)
  • Vegan cashew sour cream (optional)
  • Vegan nacho cheese (optional)
  • Tortilla strips (optional)
  • Lime wedges (optional)
  • Fresh cilantro (optional)
  • Hot sauce or sriracha (optional)

INSTRUCTIONS

  • Cilantro Lime Rice:
    • Cook rice according to the package directions.
    • Once cooked, add rice to a bowl and mix in cilantro, lime juice, and salt. Stir to combine.
  • Spicy Black Beans & Corn:
    • While the rice cooks, heat oil in a large pan over medium heat. Add the diced onion and cook, stirring occasionally, for 3-5 minutes until soft and fragrant.
    • Add black beans, corn, and all spices to the pan. Stir and cook for 8-10 minutes, stirring occasionally, until heated through.
  • Easy Guacamole:
    • While the rice and beans are cooking, prepare the guacamole.
    • Slice the avocado and remove the pit.
    • Mash all the ingredients together in a bowl until nearly smooth and creamy.
  • Assemble and Serve:
    • Place chopped romaine lettuce in bowls.
    • Top with cilantro lime rice and spicy black beans and corn.
    • Add pico de gallo, salsa, guacamole, vegan sour cream, tortilla strips, and any additional toppings you like.
    • Serve with lime wedges, cilantro, or a drizzle of hot sauce for extra flavor. Enjoy!

NOTES

For variety, you can wrap the ingredients in a large tortilla to make a burrito or use small corn tortillas to create tacos.
