VANILLA SNAP BISCUITS: A DELICIOUS LITTLE COOKIE

These vanilla snap biscuits are decadently buttery and utterly delicious. With their delightful crunch and irresistible flavor, they’re perfect for any occasion. Enjoy them on their own with a cup of tea or get creative by adding your favorite icing decorations. This recipe is a favorite on my website, and it’s incredibly simple to make with just five ingredients.

INGREDIENTS

  • 185 grams butter
  • 220 grams caster sugar (1 cup)
  • 1 ½ tsp vanilla extract
  • 375 grams cake or all-purpose flour (2 ½ cups)
  • 1 large egg
  • 1 egg yolk
  • Icing sugar (optional for dusting) or icing/frosting for decoration

INSTRUCTIONS

  • Preheat the oven to 180°C/350°F.
  • In a food processor, combine the butter, sugar, and vanilla, blending until smooth.
  • Add the flour, egg, and egg yolk, processing until the mixture forms a soft dough.
  • Remove the dough from the processor and knead gently to bring it together into a ball. Wrap it in cling film and chill in the fridge for 30 minutes.
  • Roll the dough out between two sheets of baking paper or on a lightly floured surface to about ½ cm (5mm) thick.
  • Cut the dough into shapes of around 7cm (or desired size), ensuring uniformity for even baking.
  • Place the cut-out dough shapes onto a baking sheet lined with baking paper or silicone baking mats.
  • Bake for 10-12 minutes, checking at 10 minutes, until golden brown. Rotate the pan halfway through baking to ensure even cooking.
  • Carefully transfer the biscuits from the tray and let them cool on a wire rack. Be mindful of carry-over cooking, as they may brown further if left on the tray.
  • Once cooled, dust with icing sugar or decorate as desired.

NOTES

  • These biscuits can be made ahead and stored in an airtight container.
  • While delicious on their own, these biscuits also serve as the perfect canvas for decoration.
