These vanilla snap biscuits are decadently buttery and utterly delicious. With their delightful crunch and irresistible flavor, they’re perfect for any occasion. Enjoy them on their own with a cup of tea or get creative by adding your favorite icing decorations. This recipe is a favorite on my website, and it’s incredibly simple to make with just five ingredients.
INGREDIENTS
- 185 grams butter
- 220 grams caster sugar (1 cup)
- 1 ½ tsp vanilla extract
- 375 grams cake or all-purpose flour (2 ½ cups)
- 1 large egg
- 1 egg yolk
- Icing sugar (optional for dusting) or icing/frosting for decoration
INSTRUCTIONS
- Preheat the oven to 180°C/350°F.
- In a food processor, combine the butter, sugar, and vanilla, blending until smooth.
- Add the flour, egg, and egg yolk, processing until the mixture forms a soft dough.
- Remove the dough from the processor and knead gently to bring it together into a ball. Wrap it in cling film and chill in the fridge for 30 minutes.
- Roll the dough out between two sheets of baking paper or on a lightly floured surface to about ½ cm (5mm) thick.
- Cut the dough into shapes of around 7cm (or desired size), ensuring uniformity for even baking.
- Place the cut-out dough shapes onto a baking sheet lined with baking paper or silicone baking mats.
- Bake for 10-12 minutes, checking at 10 minutes, until golden brown. Rotate the pan halfway through baking to ensure even cooking.
- Carefully transfer the biscuits from the tray and let them cool on a wire rack. Be mindful of carry-over cooking, as they may brown further if left on the tray.
- Once cooled, dust with icing sugar or decorate as desired.
NOTES
- These biscuits can be made ahead and stored in an airtight container.
- While delicious on their own, these biscuits also serve as the perfect canvas for decoration.
