Turkey Noodle Casserole is a comforting and delicious dinner that the whole family will love!
INGREDIENTS
- 8 ounces extra-wide egg noodles
- 3 slices bacon, chopped
- 20 ounces ground turkey (or 2 ½ cups chopped leftover turkey)
- 16 ounces sliced white mushrooms
- 1 medium onion, chopped
- Salt and freshly ground black pepper, to taste
- 2 teaspoons poultry seasoning
- ½ cup dry white wine
- 1 cup (or more) chicken broth
- ½ cup heavy whipping cream
- ¼ teaspoon ground nutmeg
- 8 ounces grated Gruyere or Swiss cheese
- 1 cup plain breadcrumbs
- 2 to 3 tablespoons chopped fresh parsley

INSTRUCTIONS
Step 1: Cook the noodles
Bring a large pot of salted water to a boil. Cook the egg noodles until al dente, then drain and return to the pot.
Step 2: Prepare the turkey mixture
- Heat a large, deep nonstick skillet over medium-high heat.
- Add the chopped bacon and cook for 2–3 minutes until crisp.
- Add the ground turkey and cook until browned, breaking it apart with a spoon. (If using leftover turkey, add it later with the mushrooms and onions.)
- Push the turkey to one side of the pan and add the mushrooms and onions to the other.
- Cook for 3–5 minutes, then mix everything together.
- Season with salt, pepper, and poultry seasoning, then cook for another 5 minutes.
Step 3: Make the sauce
- Pour in the white wine, scraping up any browned bits from the pan.
- Stir in the chicken broth and bring to a boil.
- Reduce the heat and add the heavy cream and nutmeg. Stir well, then taste and adjust seasoning if needed.
Step 4: Assemble the casserole
- Preheat the broiler to high.
- Combine the cooked noodles with the turkey mixture.
- Lightly grease a casserole dish and transfer the mixture to it.
- Sprinkle the top with grated Gruyere and breadcrumbs.
Step 5: Broil and serve
- Place the casserole about 8–10 inches from the broiler and broil for 2–3 minutes, until the cheese is melted and the breadcrumbs are golden brown.
- Remove from the oven and garnish with fresh parsley.
NOTES
- If using leftover turkey, simply heat it with the mushrooms and onions instead of browning it with the bacon. About 2 ½ cups should be enough.
